From April to December we produce a variety of goat milk cheeses from our goat milk including chevre, feta, and aged cheeses. They are available March to December at the farm and at select local stores and restaurants. Our chevre is a tart and creamy fresh cheese suitable for snacking or for a variety of recipes both sweet and savory. We also offer flavored chevres: Peppercorn, Chive and Garlic, Lucky Seven (a savory blend of seven herbs and spices), Lemon Dill, Sun-dried Tomato, and seasonal flavors including Basil Pesto (summer) and Cranberry (fall and winter). All of the chevres come in 5 ounce logs or tubs. Feta is a salty, pungent fresh cheese often used in salads. We package our feta in a 5 ounce block in a salt brine and in a marinade of olive oil, herbs and garlic packaged in an 8 ounce glass jar. The marinated feta is a favorite for salads or served with a crusty bread. Our aged cheeses are made from raw goat milk and aged at least 60 days. Mountain Moon is a gouda-type that develops a rich caramel flavor as it ages. It is best served at room temperature with apples or pears. Capella has a smooth texture and peppery, complex flavor. It is wonderful melted and can be used in cooking as well as sliced and served at room temperature with fruit or cured meats. All of our goat milk cheeses are made using fresh milk from our herd of Nubian and LaMancha dairy goats. Their milk is typically rich and creamy and is particularly suited to making rich, velvety fresh cheeses. The goats are fed high quality hay and grain and graze on pasture during the growing season. We do not use chemical fertilizers, pesticides or herbicides on our pasture. We believe the health of our herd is the foundation for a high quality product. We are licensed in the State of New Hampshire to produce and process milk in accordance with strict guidelines to produce a clean, quality, healthy product. Our fresh cheeses (Chevre and Feta) are made with fresh, whole milk, which is pasteurized to eliminate undesirable bacteria. Bacterial cultures and enzymes are added to develop flavor and aid coagulation. Our raw-milk cheeses are aged at least 60 days in compliance with federal law to eliminate potentially harmful bacteria.
